On the eleventh day of cookies my sweet love gave to me Lemon Spritzer Cookies! I thought I would through a yummy light cookie on here. It is tasty and will so be the highlight of your next cookie exchange!
2 cups of butter softened ( this would be 1 entire box of butter)
1 and 1/4 cups of sugar
2 large eggs
Grated peel of 1 lemon
2 teaspoons of lemon juice
5 and 1/4 cup of all purpose flour
1/4 teaspoon salt
colored sugar for decoration
- In a large bowl place the butter and sugar. Cream until you get a pale yellow and the mixture is fluffy. Beat the eggs in one at a time and incorporate completely after each egg. All lemon peel, lemon juice and vanilla.
- Grab another bowl and combine flour and salt. Gradually add to the wet mixture. Press dough one inch apart onto an ungreased baking sheet ( ungreased due to all the butter… it won’t stick!)
- Sprinkle with colored sugar before you bake. Bake at 350 degrees for 8 to 10 minutes or until lightly brown.
