On the third day of cookies my sweet love gave to me White Chocolate Macadamia Cookies ! Today we are making a super yummy cookie that is a true classic! Well let’s get cooking!!
2 and 1/2 cups of all purpose flour sifted
1 teaspoon of baking soda
1 teaspoon salt
12 tablespoons ( 1 and 1/2 sticks) unsalted butter at room temp
3/4 cup granulated sugar
1/2 cup light brown sugar
3 tablespoons light corn syrup
2 large eggs
2 teaspoons vanilla extract
2 cups of white chocolate chips
1 cup salted macadamia nuts chopped coarsely
- Pre-heat oven to 350 degrees and change racks to the upper and the lower third. Mix the dry ingredients together ( flour, baking soda, and salt) and set aside.
- With an electric mixer, beat the butter, sugars, and corn syrup on medium high speed. You want to achieve a light and fluffy look. This can take 3 to 4 minutes. Add each egg one at a time and incorporate fully. Add vanilla just until combined.
- Reduce mixer speed to low as you gradually mix in the flour mixture. Do not over mix. Fold in the chocolate chips and macadamia nuts.
- **Easy Alert** Drop by the level tablespoon onto an UNGREASED baking sheet. Space the cookies 2 inches apart and bake until golden. This will take 9 to 11 minutes depending on how hot your oven is.
