Welcome to the 12 Days of Cookies! Every day from December 1 through December 12 I will post a new cookie recipe! I hope that you enjoy them as much as we do ! These are 12 of our family favorites! On the  third day of cookies my sweet love gave to me White Chocolate Macadamia Cookies ! Today we are making a super yummy cookie that is a true classic!  Well let’s get cooking!!

 

Ingredients:

2 and 1/2 cups of all purpose flour sifted

1 teaspoon of baking soda

1 teaspoon salt

12 tablespoons ( 1 and 1/2 sticks) unsalted butter at room temp

3/4 cup granulated sugar

1/2 cup light brown sugar

3 tablespoons light corn syrup

2 large eggs

2 teaspoons vanilla extract

2 cups of white chocolate chips

1 cup salted macadamia nuts chopped coarsely

 

Directions:

  1. Pre-heat oven to 350 degrees and change racks to the upper and the lower third. Mix the dry ingredients together ( flour, baking soda, and salt) and set aside.
  2. With an electric mixer, beat the butter, sugars, and corn syrup on medium high speed. You want to achieve a light and fluffy look. This can take 3 to 4 minutes. Add each egg one at a time and incorporate fully. Add vanilla just until combined.
  3. Reduce mixer speed to low as you gradually mix in the flour mixture. Do not over mix. Fold in the chocolate chips and macadamia nuts.
  4. **Easy Alert** Drop by the level tablespoon onto an UNGREASED baking sheet.  Space the cookies 2 inches apart and bake until golden. This will take 9 to 11 minutes depending on how hot your oven is.

On the second day of cookies my sweet love gave to me Marshmallow Chocolate Chunk Cookies ! Today we are making a super yummy and a cookie that Santa will LOVE!  This will be the star of any cookie exchange!  Well let’s get this party started!!

Ingredients:

1 and 1/2 cup of all purpose flour, sifted

3/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup ( which is 1 stick) unsalted ( remember the salt!!) butter

24 ounce semisweet chocolate chopped into pieces ( not chips)

1 cup of granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 and 1/2 cups of mini marshmallows

 

Directions:

  1. Heat oven to 350 degrees. Line a baking sheet with parchment, please do not grease the pan. In a large bowl whisk together the flour, salt, baking powder, and baking soda. Set this bowl aside and let’s work on wet ingredients.
  2. In a large microwave-safe bowl. Combine the butter and half the chocolate ( about 12 ounces). Microwave on high and stop and stir every 30 seconds until melted and smooth. Let this cool slightly so it will not scramble the eggs. Let’s whisk in sugar, eggs, and vanilla until completely smooth.
  3. Gradually mix both the flour and wet ingredients together. Do not over mix. Fold in the marshmallows and chocolate chunks. Let sit for 15 minutes.
  4. Drop mounds with two spoons. Make each mound about 1 heaping tablespoon each. Place them 2 inches apart.
  5. Bake and rotate halfway during middle of baking. Bake until firm around the edges and cracked on the tops for 12 to 15 minutes. Let cool slightly before transferring to wire racks.

On the first day of cookies my sweet love gave to me Sugar Cookies! Today we are starting with a classic sugar cookie! These are so versatile! You can always make regular sugar cookies by the spoonful or even make fun cut outs to ice!  This recipe from Real Simple calls for the sugar cookie dough to be placed in the fridge for at least 2 hours and up to 3 days. Great recipe for making ahead of time.

Sugar Cookies:

Ingredients:

1/2 cup ( 1 stick) of unsalted butter brought to room temp. ( Unsalted helps to control salt)

1/2 cup of granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1/2 teaspoon salt

1 and 3/4 a cup of flour, I use all purpose. I would recommend sifting as well.

Directions:

Step 1-  Line a baking sheet with parchment paper. (When you grease the cookie sheet it can make the edges of the cookies a little crispy and brown).  Beat the butter and granulated sugar on medium high ( if using a mixer) until light pale yellow and fluffy. This can take 2 to 3 minutes.  Beat the egg in, then add the vanilla and salt.

Step 2-  Reduce mixer speed to low and gradually add the flour or you will have a total mess to clean! Do not over mix so that the cookie will not be tough. Shake the dough into a 1 inch disk, wrap in plastic wrap and place in the refrigerator for at least 2 hours.

Step 3-  Heat oven to 350 degrees.  Flour a surface and roll the dough to 1/4 inch thick. ( this is for cut out cookies) Make the different cut outs you prefer. Continue until you have filled up the baking sheet. If need be, place the dough back in the fridge while the first batch bakes.

Step 4- Bake and rotate the baking sheet half way through baking. You will want to watch the cookies until the edges turn a light brown. This is the time to pull them out asap! Sugar cookie baking is an art. My mom can not make sugar cookies to save her life… I can make them better than Mrs. Fields! ( Sorry ma’am!)

Transfer the cookies to a wire rack. Please let the cookies cool completely before you ice them.

homeschool

 

Whew…. the day is almost over. The kids have dispersed and I am sitting with peppermint tea trying to relax.

Today was our first day of homeschooling. Everyone was super excited last night before bed. We all woke up after 7 am which was pretty fantastic! It was nice today to wake up and just relax. To be honest, it felt like a weekend or holiday. Not like our new normal. The kids were quick to dress, eat breakfast and do their first chore.

I was able to sign the kids up for Time4learning.com. This curriculum is pretty great. It was fun to check it out and see how to use the website. Today the kids were able to set up their control journals from flylady.  The kids had a book report due and they did a fantastic job! The kids and I were done before lunch this morning. It was crazy to watch them do their work and learn.

Today was a complete learning curb. We have so much more to learn how to do and how to get into our homeschool groove. Tonight I am starting their assignment journals to help them to become independent on their learning journeys.

Teens: Okay this one was a little harder for me. I officially have a teenager but she still likes the same things she liked 3 years ago so it is easy to buy for her! Here we go!

Minecraft

If you know my family…. you know they love Minecraft! My kids started to play Minecraft after their uncle and my brother was killed in a car accident in 2014. It was a form of therapy for them to be able to escape what they were feeling in that moment. I know it may not have been the healthiest way for them to cope but it helped for what we needed it to be. I was presented with the new story mode and my kids freaked out! They were so excited for me to review this new game because they love the original game.  I could not wait to get the game and watch the kids play it!

Let me tell you a little about this new game! Minecraft is from the publisher Telltale Games. This game was created by award-winning Telltale Games in partnership with Minecraft creators Mojang.  It is available for these different gaming platforms: PS4, Xbox One, PS3, Xbox 360 and available for download on your IOS/Android devices! It is coming soon for download to Wii U!!  Minecraft Story Mode is an all new narrative drive, episodic game series. This is set in the world of Minecraft but it introduces new characters but keeps some familiar themes. This helps with playing the game, but this is a whole new experience for the Minecrafters or like I call my kiddos- block heads!!! LOL They found it easy to navigate through the different adventures. They loved being able to interact with the characters such as Gabriel the Warriror and having a mission to complete with the quest of finding the Order of the Stone.

The kids loved that the story was driven through the decisions they made during their journey. How the outcomes would end was 100% decided on how they reacted to the situation presented to them. This new Story Mode has an all star cast such as Patton Oswalt, Brian Posehn, Ashley Jownson, and so much more! This game is going to be entered into my 2015 Gift Guide for Christmas! It is a 100% winner for any and all Minecraft families out there! You will not be disappointed with the game and the new story to follow.

homeschool

 

We have decided to start homeschooling our children. It was not a light decision and we are excited for the new journey. I have begged my husband for years to homeschool my children but my husband was always against it. Finally after a teachers conference he decided that public school was no longer for our family. We currently have a 7th grader, 5th grader and 2nd grader. We are about to embark on something we have had to research. Here are a few of the things we are doing in order to get ready for our homeschool

1. We registered with the state:I filled on November 11 and was approved on November 12th. We are legal and this is the first step we took for the homeschool. We currently live in North Carolina.

2. We found our curriculum! We realized that there are a million different ways to homeschool. I will not lie, I love something that is ready for me to just use. I was feeling a little lost when it came to what we were going to teach our babies. I want to teach them the best. I do not want to let them down. We found Time4Learning. This program seems to have a very good foundation for our family to get started. We have decided that we will supplement a few other things in order to make sure they learn everything they can.

3. We are setting up a classroomMy husband has been pricing laptops for the kids. They currently have laptops at school right now and we know they can take care of them. We have a table set up for now but plan on buying them their own desk for them to use as a school desk. We have started to decorate the walls in order to have a more traditional classroom feel. This is in our spare bedroom where we can “go” to school and then “come” home each day. This is my favorite so far:

4. We are using community resources!We have taken a family trip to the public library. This place is such a gem! In today’s day and age we sometimes forget these little places are here to help us. My kids had a great time getting to pick out books. My husband and I asked each child to pick a book that was non-fiction. They will be writing a summary ( for cody – 2nd grade), and book reports for Alexis ( 7th grader) and Brandon ( 5th grader).

5. We are learning to go with the flow!Homeschooling is supposed to be fun! Sometimes I can put a lot of pressure on myself to try and justify the reasons and decisions. Really it is because we feel it is the best decision for our family. We joined a co-op for our children to have field trips, meet new homeschool friends, and get out into the community and learn more!

I hope that if you homeschool you can give me some tips, advice, etc! I will keep a weekly update on how homeschooling is going for our family. It will help to keep me accountable but maybe help someone in the future if they wanted to homeschool.

Thanksgiving is a great time for friends and family. Gathering everyone together for a great meal is fun, but keeping children happy and engaged for the entire holiday can be difficult. Children need activities to keep them busy and part of the holiday, so you and your guests can enjoy themselves in return.

 

Here are five Thanksgiving Day activities for kids to keep them happy and occupied the whole day.

 

  1. Table Crafts
    Every Thanksgiving table has a great centerpiece. Why not have one for the kids table? Cover the table with craft paper or large sheets of white paper. Use small boxes or baskets and fill them with craft supplies: string and beads to make necklaces (beads can be a choking hazard for kids under 3), stamps and stamp pads, colored pencils, crayons, foam shapes and stickers. Let the kids’ imagination run wild and they will keep themselves occupied for hours.

 

  1. Turkey Hunt
    Think of it as an Easter-egg hunt, but with a Thanksgiving theme. Purchase a bunch of colorful feathers at a craft store and hide them around the yard or house, then let the kids run wild finding them. You can have awards for the winners or have the winner eat first.

 

  1. Place Card Appreciation
    Being thankful is the reason for the season. Make it easy for your kids to say what they are thankful for by writing it down. Have your kids make place cards for each guest, then write why they are thankful for each guest. Have your guests read them out loud and enjoy the laughs and happiness.

 

  1. Will Run To Food
    A great family activity is running. Many towns have races on Thanksgiving morning called ‘Turkey Trots.’ Get the whole family involved: Push little ones in strollers and let bigger kids run/walk/skip/ hop their way to the finish. They will work up an appetite for the great feast later.

 

  1. Corn Husk Challenge
    Hand each kid a few corn ears in husks. Make sure they all have the same amount. Let them race to see who can finish husking first. It is a semi-messy fun-fest that will leave the kids happy and smiling.

 

These activities will keep kids entertained all holiday long.
